Chilled Orange-Cucumber Mint Soup
2 oranges, peeled (1 cup juice)
1 cucumber (1/2 cup juice)
4 stalks celery (1 cup juice)
2 cups spring water
3 tablespoons palm or date sugar
1 cup plain rice yogurt
2 cucumbers, peeled and chopped
2 teaspoons fresh mint, finely chopped
6 tablespoons macadamia nut butter
2 teaspoons fresh parsley, chopped
¼ cup red grapes, as garnish
2 fresh figs, sliced as garnish
1. Juice the oranges, cucumber and celery.
2. In a blender, combine the juices, spring water, palm or date sugar, rice yogurt, cucumbers, mint, macadamia nut butter and parsley. Blend well.
3. Chill of 1 hour.
4. Garnish with the red grapes and fresh figs.
5. Serve cold.
